The Secret to Perfectly Tender Corn on the Cob

Fresh corn on the cob is a summer favorite, but cooking it too long can leave the kernels tough, chewy, and less sweet. For most fresh corn, you only need a few minutes in boiling water. The key is starting with good-quality, fresh ears and keeping a close eye on the cooking time.

Freshness matters because corn’s natural sugars gradually turn into starch after harvesting. Look for bright green husks, moist-looking silk, and firm, plump kernels. Avoid ears with dry husks, discolored silk, soft spots, or missing kernels, as these can indicate that the corn is past its prime.

To cook the corn, remove the husks and silk, then bring a large pot of water to a rolling boil. Add the corn once the water is boiling. Very fresh corn typically needs about 4–5 minutes, while most fresh ears take 6–7 minutes. Larger or older ears may need up to 8 minutes, but significantly longer cooking can make the kernels less juicy and tender.

Once cooked, remove the corn with tongs and serve it immediately. Classic butter and salt are always delicious, but you can also try garlic butter, herbs, Parmesan, chili powder, or lime. Ultimately, perfectly cooked corn is simple: choose fresh ears, use boiling water, and avoid overcooking. For most corn, 4–7 minutes is all you need.
