Foods You Should Avoid Cooking in a Cast-Iron Skillet—and Why

Cast-iron skillets are prized for their durability, versatility, and ability to produce excellent cooking results. With proper care, they can last for generations. However, certain foods and cooking methods can damage the seasoning, leave stubborn residue, or encourage rust, so knowing what to avoid can help preserve your skillet.

Highly acidic ingredients such as tomatoes, vinegar, citrus, and wine can gradually weaken the seasoning and react with exposed metal. While occasional use may be fine in a well-seasoned pan, long-simmering acidic sauces are generally better prepared in stainless-steel or enameled cookware.

Delicate or sticky foods can also present challenges. Fish and eggs may stick and break apart when the seasoning is not well established, while sugary sauces can burn and leave difficult-to-remove residue. Strong flavors such as garlic, curry, and smoky spices may linger in the pan and affect foods cooked afterward. Excess moisture is another concern, so avoid prolonged soaking, boiling, or storing leftovers in the skillet.

After cleaning, dry the skillet thoroughly and apply a thin layer of cooking oil to help protect the seasoning. Avoid exposing a hot pan to cold water, as sudden temperature changes can damage the cookware. With proper care and suitable recipes, your cast-iron skillet can remain a reliable kitchen companion for many years.
