You May Be Storing Garlic Wrong—These Simple Tricks Can Keep It Fresh Longer

Garlic is a kitchen staple, but the way you store it can make a noticeable difference in how long it stays fresh. Whole garlic bulbs generally do best when kept away from moisture, heat, and direct sunlight. With the right conditions, they can remain usable for weeks or even months.

For everyday storage, keep whole bulbs in a cool, dry, well-ventilated place at room temperature. An open container or basket can work well because air can circulate around the garlic. Some people even use an egg carton to keep individual bulbs separated and reduce moisture buildup. Avoid sealed plastic bags or damp areas, which can encourage mold and spoilage.

Freezing is another option if you have more garlic than you can use quickly. Peel the cloves, place them in an airtight freezer-safe bag or container, and freeze them for later use. Frozen garlic may have a slightly different texture after thawing, but it can still be convenient for cooking soups, sauces, stir-fries, and other dishes.

Peeled garlic can also be preserved in oil, but this method requires extra care. Garlic stored in oil can create conditions that allow botulism-causing bacteria to grow if it is kept improperly. For safety, homemade garlic-in-oil preparations should be refrigerated and used promptly rather than left at room temperature. When in doubt, freezing is a simpler long-term option.

The key to keeping garlic fresh is controlling moisture and allowing good airflow. Store whole bulbs in a dry, ventilated location, freeze cloves when you need longer storage, and treat garlic preserved in oil with particular caution. A few simple changes can reduce waste and help keep your garlic ready whenever a recipe calls for it.
