The Truth About Crab Sticks: What’s Really Inside This Popular Seafood Favorite?

Crab sticks are a familiar ingredient in sushi rolls, seafood salads, and sandwiches, but their name can be misleading. Despite their crab-like appearance and flavor, most crab sticks contain little or no actual crab meat. Instead, they are typically made from processed white fish, making them a more affordable alternative to traditional seafood.

The main ingredient is usually surimi, a fish paste commonly produced from Alaska pollock or other white-fleshed fish. The fish is minced, washed, and processed before being combined with ingredients such as water, starch, salt, sugar, and seasonings. This mixture is then shaped and cooked to create the firm, slightly chewy texture associated with crab sticks.

Their distinctive red-and-white appearance also comes from the manufacturing process. Manufacturers add coloring to the outside to imitate the look of cooked crab meat, while flavorings help create a seafood-like taste. Some varieties may contain small amounts of real crab or other shellfish ingredients, but recipes differ between brands. Checking the packaging is the best way to find out exactly what a particular product contains.

Although imitation crab can be a convenient and budget-friendly choice, it is not nutritionally identical to real crab. Its protein content varies, and added starch and salt can affect its overall nutritional profile. Real crab generally provides a different combination of nutrients, so anyone comparing the two should check the nutrition labels rather than assuming they offer the same benefits.

There are also a few important precautions to remember. Imitation crab commonly contains fish, and certain varieties may include shellfish ingredients, so people with allergies should carefully read the label. Refrigerated products must be stored properly and consumed according to package instructions. Crab sticks are not necessarily unhealthy or unsafe simply because they are processed, but understanding their ingredients helps you make informed choices. The next time you enjoy a California roll or seafood salad, you will know that the familiar crab-like filling may be made from fish rather than crab.
